thiamineor vitamin B1a water-soluble organic compound found in cereals (e.g. the husk of rice) and yeast, whose main function is to act as a COENZYME in sugar breakdown by forming part of the NAD molecule. Thiamine is part of the B-COMPLEX of VITAMINS and deficiency results in the disease BERI-BERI.
