nitrate

 [ni´trāt]
any salt or ester of nitric acid; organic nitrates are used in the treatment of angina pectoris and as preservatives in meat products. Some individuals have sensitivity to nitrates and may suffer from headache, diarrhea, or urticaria after ingesting them.
