It is a mixture of beta-lactoglobulin (~65%), alpha-lactalbumin (~25%), and serum albumin (~8%), constituting ~20% of the total bovine milk protein.
The bovine protein alpha-lactalbumin increases the plasma Trp/LNAA, and in vulnerable subjects it raises brain serotonin activity, reduced cortisol and improves mood under stress.

The most important whey allergens include beta-lactoglobulin (Bos d 5, the most abundant cow's milk whey protein, which occurs in the milk of many other species but is not present in human milk) and alpha-lactalbumin (Bos d 4).
Lactation is disrupted by alpha-lactalbumin deficiency and can be restored by human alpha-lactalbumin gene replacement in mice.
We have observed their expressions to be high in the lactation stage such as "caseins (alpha-S1, alpha-S2, beta, and kappa casein)" and whey proteins "beta-lactoglobulin" and "alpha-lactalbumin." Expression of the milk proteins was slightly near the end of gestation, which can be used as a symbol of the maturity of mammary epithelial cells [29].
Alpha-lactalbumin ([alpha]-LA) is the major protein in the camel and human milk whey protein group and [beta]-lactoglobulin ([beta]-LG) is absent from camel and human milk (Table 3).
