A mathematical model used to determine the impact of ingested foods on the pH of dental plaque and subsequent caries formation. Decalcification of teeth occurs when the pH in the oral cavity is less than 5.5.
To reduce decalcification of tooth surfaces, patients should be encouraged to consume foods that do not result in a drop in plaque pH.
