a family of gram-positive, aerobic or facultatively anaerobic bacteria containing the genera Staphylococcus and Micrococcus.

A family of bacteria (order Eubacteriales) containing gram-positive spheric cells that occur singly or in pairs, tetrads, packets, irregular masses, or even chains. These organisms are rarely motile. Free-living, saprophytic, parasitic, and pathogenic species occur. The type genus is Micrococcus.

The family Micrococcaceae includes the genus Staphylococcus, a typical resident of the mouth and intestinal tract that can also be contracted as an external contaminant from the skin of the animal or the environment.

As amostras para determinacao dos valores de [a.sub.w], pH, umidade, cloretos, nitritos e contagens das bacterias mesofilas, lacticas, Micrococcaceae e Staphylococcus xylosus foram coletadas durante a etapa de processamento da paleta (pontos de coleta de amostras 1 ao 6), e a cada 30 dias, durante os 120 dias de armazenamento (pontos de coleta de amostras 7 ao 10).
As bacterias pesquisadas foram as pertencentes a familia Micrococcaceae e Staphylococcus xylosus em meio agar mannitol salt (MAS), as mesofilas aerobias em meio agar plate count (PCA) e as bacterias acido lacticas em meio agar man rogosa & sharpe (MRS), com sobrecamada.
--Cultivos que resultaron ser cocos GRAM positivos, catalasa positivo; eran clasificados como germenes de la familia Micrococcaceae, por lo que se procedio a practicar las pruebas especificas para identificar genero y especie, las cuales fueron: Oxido-Fermentacion de la Glucosa (O-F), Coagulasa, Voges Proskauer y Fermentacion del Manitol [3, 13, 16], FIG.1 .
