Agenise

To bleach flour with agene (nitrogen trichloride), a process which was in use from the early to mid-20th century, during which time up to 80% of flour was so processed. A byproduct of the process, methionine sulfoximine (MSO), inhibits glutamine and glutathione (GSH)—the latter of which is a key antioxidant and free radical scavenger—and thus diminishes the body's antioxidant defenses, possibly leading to increased oxidative stress. Decreased glutamine synthesis may increase free glutamate, giving rise to increased levels of ammonia, compromising neuronal health and survival. Toxic actions of some compounds in processed foods might play a role in the development of Alzheimer's disease, Parkinson's disease and amyotrophic lateral sclerosis.
