syneresis /syn·er·e·sis/ (si-ner´e-sis) a drawing together of the particles of the dispersed phase of a gel, with separation of some of the disperse medium and shrinkage of the gel.
syneresis (siner´ n a process by which a fluid exudate forms on the surface of a hydrocolloid gel, even when the gel is in water or in a humid atmosphere. It is accompanied by shrinkage of the gel. syneresis a drawing together of the particles of the disperse phase of a gel, with separation of some of the disperse medium and shrinkage of the gel.
