red kidney bean poisoning

Poisoning caused by a phytohemagglutinin in undercooked red kidney beans (Phaseolus vulgaris). Shortly after the ingestion of raw beans, nausea and vomiting develop, occasionally resulting in dehydration and the need for hospitalization in order to receive intravenous fluids. The intoxication usually lasts a few hours and then spontaneously resolves.
