The principal digestive enzyme of gastric juice that is formed from pepsinogen and catalyzes the hydrolysis of peptide bonds to form proteoses and peptones.
pepsin A,
n a gastric protease found in the stomach that breaks down proteins. Most effective at pH values between 2.0 and 3.0 and inactive at pH values higher than 5.0.
