meat from animals dead on arrival or of insufficient quality to go into the human food chain; killed at a separate establishment. It is not always possible to keep this meat separate from butcher's meat—illegal substitutions are serious offenses but the rewards are high.

a by-product of meat-packing or abattoir industries containing about 50% protein but varying depending on the material included and whether preparation is by a wet-cooking or tankage process, or a dry-cooking method. A popular protein supplement for all classes of livestock. Use for food-producing animals now restricted because of the risk of transmitting the agents causing spongiform encephalopathies.

Q. Well I’m a vegetarian and I might get anemia. How do I get Iron and protein without meat? My mom my take giant vitamin pills and eat nasty protein bars. It's not as bad killing animals though... Is their any way I can stay healthy? Also being a vegetarian has made me extremely under weight and I am probably going to get anemia if i don't get all my vitamins. HELP!

A. You are, at least partially, what you eat, so it's important to take care of your diet. Being underweight, especially during adolescence, may pose substantial risk to the health. If your diet caused you to be underweight I would consider consulting a professional (e.g doctor, dietitian).

Iron from vegetables is not as good as iron from meat. Foods rich in iron include whole or enriched breads or grains, iron-fortified cereals, legumes, green leafy vegetables, dried fruits, soy products, blackstrap molasses, bulgur, and wheat germ. Vitamin C helps the body to absorb the iron from the food better.

Q. What vitamins does meat have that i should replace in my diet? I stop eating meat and am trying to make sure that I get the right vitamins. I already take a multivitamins and fish oil pills every day. Are there any other specific vitamins I should take? If so, what do they do?

A. Vitamin B complex, iron pills, protein supplement. You can find those in legumes, they have a lot of proteins. Lentils have vitamin B, brown rice also.

Q. My Sister has Diarrhea for 3 days is it Salmonella? My Sister and I went out to a Chinese restaurant last week to celebrate my Birthday. A couple of days later my Sister became ill and has stomach aches and diarrhea. Is it Salmonella?

A. If the illness was caused by eating in the restaurant, then it could be Salmonella or food poisoning.
Salmonella are usually transmitted to humans by eating foods contaminated with animal feces. Contaminated foods usually look and smell normal. Contaminated foods are often of animal origin, such as beef, poultry, milk, or eggs, but all foods, including vegetables may become contaminated. Many raw foods of animal origin are frequently contaminated, but fortunately, thorough cooking kills Salmonella. Food may also become contaminated by the unwashed hands of an infected food handler, who forgot to wash his or her hands with soap after using the bathroom.
