N-nitroso compounds only increased after red meat, suggesting that the meat's heme iron might be at fault.
Red meat is prescribed to fulfill the demands of the body in such cases, so is poultry food like eggs, turkey and chicken and sea food such as mussels, clams and shrimps-more so because they contain heme iron which is easily absorbable.
It should be noted that there was no decrease in risk for ovulatory infertility in those who consumed either heme iron or lower amounts of non-heme iron (40 mg or below per day).
