An 18-carbon fatty acid with three double bonds (at carbons 9, 11, and 13); isomeric with linolenic acid; found in plant fats.

For tung oil, with mostly conjugated double bonds from eleostearic acid (~ 77-82 percent eleostearic acid), the rate of autoxidation is much higher than that observed in linolenic acid, due to the conjugation.
Instead of releasing volatiles into the air, paints made with vegetable oil would dry by chemical cross-linking of eleostearic acid in the oil to create a finish-like coating.
