chemical food residue
chemicals used in agriculture present a real threat to the saleability of animal products if they are contaminated with chemical residues. The residues are often harmful to human health and are also the target of some very stringent pure foods legislation. Mercury in fish, sulfonamides in pig products, iodine in milk and chlorinated hydrocarbons in beef have been some of the celebrated examples of environmental and human food chain pollution.

maximum residue limits
maximum concentrations of individual chemicals, or groups of chemicals, especially metabolites, and including pharmaceutical and industrial chemicals, in commodities or tissues to be used as human or animal feeds, and as defined by the food standard codes of a particular country or state; permissible levels vary with local legislation. Called also MRL.
