saponification

 [sah-pon″ĭ-fĭ-ka´shun]
conversion of an oil or fat into a soap by combination with an alkali. In chemistry, the term now denotes the hydrolysis of an ester by an alkali, resulting in the production of a free alcohol and an alkali salt of the ester acid.

sa·pon·i·fi·ca·tion

(să-pon'i-fi-kā'shŭn),
Conversion into soap, denoting the hydrolytic action of an alkali on fat, especially on triacylglycerols; in histochemistry, saponification is used to demethylate or reverse blockage of carboxylic acid groups, thus permitting basophilia to occur.
[sapo- (sapon-) + L. facio, to make]

This "saponification" process turned them into a soap-like substance.
Refractive index, density, specific gravity, surface tension, acid value, free fatty acid value, saponification value, iodine value, colour and peroxide value were carried out.
In addition a comparison between two different methodologies as sonication in ultrasonic bath and saponification followed by liquid-liquid extraction is reported.
However, the proximate, fatty acid, amino acid, vitamin, sterol, and mineral compositions, which reflect nutritional value of seeds, and the physicochemical properties such as melting point, refractive index, iodine value, peroxide value, p-anisidine value, acid value, saponification value, p-anisidine value, and oxidative stability, which determine the uses and applications of seed oils, have been not yet analyzed for L.
The fatty acids in the fat from casein and serum were made into their methyl ester by saponification followed by esterification and analyzed by GC-FID.
In the present study, refractive index, peroxide, saponification, and acid values of different branded and unbranded vegetable oils were determined.
