You need one tablespoon of olive oil, 2 shallots, thinly sliced, 1 tsp of yellow mustard seeds, - tsp of chilli flakes, 100g of castor sugar, 2 tablespoons of white wine vinegar, 6 ripe tomatoes, quartered and sliced thinly.
