There's far more residual body to it, and if you walk on it, it springs back.
The optimal temperature is around 40 to 50 degrees -- cold, but not so cold that the meat will freeze, because you will need to hang the carcass for at least twenty-four hours, to ensure that all residual body heat has dissipated.
