Desulfotomaculum

(dē-sŭl'fō-tō-mak'yū-lŭm),
A genus of rod-shaped (straight or curved), anaerobic, chemoorganotrophic motile bacteria that stain gram-negative but have gram-positive cell walls. Found in soil, the rumen and elsewhere. The type species is Desulfotomaculum nigrificans.

This type of spoilage is associated with anaerobic sulphide-reducing spore forming bacteria such as the themophilic Desulfotomaculum nigrificans and also the mesophilic Clostridium sporogenes.
