A food derived from pigs which is popular in the southern US

cross-sectional rings of the large intestine of the pig; usually deepfried quickly to a crackling, crisp delicacy.

In business since 1960, Las Pampas is best-known for its steaks but also for a notable variety of Argentine specialties, such as cheese-filled empanadas, cheese with corn, chorizo blanco, chinchulines (sausages made from kidneys, liver and the like), and matambre, a kind of beef roll with herbs and eggs, served cold.
In May 1996 a paramilitary group known as the Chinchulines initiated a campaign of terror in the town of Bachajon.
