the number of substrate molecules converted into product in an enzyme-catalyzed reaction under saturating conditions per unit time per unit quantity of enzyme; for example, kcat = Vmax/[Etotal].

iron turnover
much of the body's iron store is fixed in intracellular sites and is not available metabolically. The portion of the iron store that is available for mobilization into new sites is called the labile iron pool and may undergo a good deal of metabolic activity.
