acetaldehyde /ac·et·al·de·hyde/ (as?et-al´de-hid?) a colorless, volatile, flammable liquid used in the manufacture of acetic acid, perfumes, and flavors; it is also an intermediate in the metabolism of alcohol. It can cause irritation of mucous membranes, pneumonia, headache, and unconsciousness.
